Rich and Dreamy, Skinny Creamed Spinach
Ingredients
- 2 cloves garlic, chopped
- 1 teaspoon olive oil
- 2 (10 ounce) packages of frozen chopped spinach, thawed and drained
- 1 (8 ounce) package reduced-fat cream cheese (I like Philadelphia brand)
- 2 tablespoons Parmesan cheese, shredded
- ½ teaspoon salt
- ¼ teaspoon fresh ground pepper or to taste
Instructions
- In a large pan, add chopped garlic and olive oil. Sauté until garlic begins to brown.
- Add drained spinach and cream cheese. Stir over medium heat until cream cheese is melted.
- Mix in Parmesan cheese, salt and pepper.
- This side dish can be prepared a day or so in advance and heated before serving.

Jaye, it sure can. You’ll need to saute the spinach until soft before adding the cream cheese.
Plus, here’s how much fresh to use to replace the frozen. A 10 ounce pkg of frozen spinach is roughly equivalent to 1.5 pounds of fresh spinach.
Fresh spinach that is torn and cooked down will yield about 1 cup, while 10 ounces of frozen spinach leaves will yield about 1.5 cups after cooking.
