Whenever a recipe calls for using eggs, I LOVE Eggland’s Best eggs!!! They have less saturated fat, less cholesterol, more Vitamin D, more Vitamin E, and double the Omega 3 than regular eggs. Most supermarkets see them in the egg aisle.
There are so many brands of healthier bacon now in most supermarkets. Look for one uncured, without nitrates.  Oscar Meyer’s sells one along with Farmer John’s, One fantastic brand is called Applegate Farms Natural Sunday Bacon. It’s low in fat and calories, uncured, and contains no nitrites! Many supermarkets carry this brand. I bought it at Vons/Safeway and Whole Foods. 
Frozen and diced hash brown potatoes can be found in the freezer section of most supermarkets. They come diced and contain no fat, just potatoes. Diced potatoes work much better for this recipe than shredded ones. I used Ore Ida’s frozen diced hash browns.

Healthy Tips

Cooking bacon on paper towels, in the microwave, is the healthiest way to cook it. Most of the fat soaks into the paper towels and doesn’t end up in the quiche. I did factor this in when doing the Skinny Facts.

Ingredients
  

Ingredients for Quiche:

  • 2 cups frozen hash brown potatoes (not thawed)  diced not shredded, see shopping tips
  • 8 slices bacon or turkey bacon, see shopping tips
  • ¾ cup grape tomatoes or cherry, cut in half, liquid drained
  • ¾ cup onions, diced
  • 3 eggs, see shopping tips
  • 2 egg whites
  • cup from a (10 ¾ oz) can Campbell’s Healthy Request cream of mushroom soup (condensed)
  • ¼ cup fat-free milk
  • Black pepper and salt, to taste

Ingredients for Topping:

  • ½ cup reduced-fat mozzarella cheese, shredded

Instructions
 

  • Preheat oven to 400 degrees. Coat a 9 x 9-inch baking pan with cooking spray.
  • To Cook Bacon: Line a plate with several paper towels. Place 4 bacon strips on paper towels. Cover with several paper towels. Cook in the microwave for 4-5 minutes until well done and crispy. Repeat with 4 remaining bacon strips. Add all cooked strips to clean paper towels and blot, cool, and crumble. Set aside.
  • Cook onions in microwave for 2 minutes, to soften.
  • In a large bowl, mix together frozen diced hash browns, cooked crumbled bacon, tomatoes, and soften onions. In a medium bowl, whisk together eggs, egg whites, condensed soup, milk, black pepper, and a little salt. Pour over potato mixture and toss to mix. Add mixture to baking pan. Cover with foil and bake for 30 minutes. Remove foil, sprinkle with cheese and bake an additional 15-18 minutes until golden brown and cheese is melted.
  • Let sit about 10 minutes to set. Cut into 6 slices. Using a spatula, carefully remove each slice.
  • Once baked, this casserole freezes great. I like to wrap into individual servings and store in the freezer. Great for a quick breakfast any day of the week!

  5. Made this today, I added garlic, cayenne pepper and fennel, still a bit dry and bland. I like the basic recipe but will add more onions, more garlic, sautéed mushrooms, broccoli and sundries tomatoes (not packed in oil) instead of the cherry tomatoes. Plus I will add some red pepper flakes. I am also going to use hot turkey sausage instead of the bacon. Just need to figure out the points difference, if there is one. Not being critical as we all have different tastes, I am all about spice and a bit of heat. I love all you share, especially figuring out the nutritional info and points. I have several cookbooks and have many of your recipe in regular rotation on my menus.

  8. Sorry Brenda, many of my recipes can be cut down for 1 but not this one. I’m cooking for just my husband and me but I still, enjoy a larger recipe. Any leftovers freeze great. Wrap well into individual servings and freeze. This will keep in the freezer for several months. At a moment’s notice, you’ll have a yummy, healthy meal.

    This is a fabulous recipe. I have made all the breakfast quiche/casseroles and they are all so good. We also used them as a supper or lunch meal served with a salad or a veggie. Love them all!   10. I am making this recipe this weekend when we have guests. I am older and always print out the recipes that I like and will make again. I have done so with your recipes before but lately, although the red prints well there is no longer a picture of the finished product in top right corner. I really like the picture as it shows what it is supposed to turn out like but also triggers my mind as to whether I have made it and want to repeat. Is it possible to return it? Thanks, Sue

For years it was available but I got tons of complaints about having too many pages printed when most people just wanted the recipe and only on one page. So when I changed the entire site several months ago, we decided to just have one page printed and the photo would no longer fit.
