Ingredient Spotlight For Skinny Taco Bowls with Cauliflower Rice

Olive Oil (1½ tablespoons): This healthy fat forms the base for sautéing our cauliflower rice and adds a subtle fruity flavor. Olive oil, rich in monounsaturated fats, helps to cook the vegetables evenly and contributes to the overall richness of the dish without being heavy.
Cauliflower Rice (16 oz bag): The star of our lighter taco bowls! Cauliflower rice is simply cauliflower florets that have been finely chopped or grated to resemble rice. It's a fantastic low-carb and low-calorie alternative to traditional rice, packed with fiber and essential nutrients. Its mild flavor readily absorbs the seasonings and flavors of the other ingredients, making it a versatile and healthy base.
Onions, diced (1 cup for cauliflower rice, 1 cup for taco meat): These aromatic vegetables play a dual role, adding a foundational savory flavor to both the cauliflower rice and the taco meat. As they cook, diced onions soften and release their natural sweetness, creating a flavorful base that complements the other spices and ingredients in each component of the bowl.
Garlic, minced (1 tablespoon): A pungent and aromatic powerhouse, minced garlic adds a distinct savory depth to the cauliflower rice. Its bold flavor enhances the overall taste and provides a delicious counterpoint to the mildness of the cauliflower and the sweetness of the onions.
Salt and Pepper (to taste): The fundamental seasoning duo that enhances the natural flavors of the cauliflower rice. Salt brings out the inherent taste of the vegetables, while pepper adds a subtle warmth and a hint of spice. Seasoning to taste allows for personalization and ensures a well-balanced flavor.
Extra Lean Ground Beef (1 pound): The protein-rich heart of our taco filling. Opting for extra lean ground beef significantly reduces the fat content, making our taco bowls a healthier option without sacrificing that classic savory beef flavor. Ground beef provides essential amino acids and a satisfyingly meaty texture that forms the core of our taco experience.
Lawry’s Taco Seasoning or McCormick Taco Seasoning Mix (1-ounce package): This convenient blend of spices provides the quintessential taco flavor. Typically containing chili powder, cumin, salt, garlic powder, onion powder, oregano, and sometimes paprika and cayenne, it offers a balanced and authentic southwestern taste that perfectly seasons the ground beef. Using a gluten-free brand like McCormick ensures the dish is suitable for those with dietary restrictions.
Corn, frozen or fresh off the cob (1 cup, break up frozen corn): Adding a touch of sweetness and a pop of color, corn provides a delightful textural contrast to the savory meat and the fluffy cauliflower rice. Whether using frozen corn (broken up for even cooking) or fresh corn kernels, its sweet flavor complements the spices and adds a touch of freshness.
Water (⅔ cup): A small amount of water helps to create a bit of moisture as the taco meat simmers with the seasoning and corn, ensuring the mixture doesn't dry out and allowing the flavors to meld together beautifully.
Romaine Lettuce, shredded or chopped (2 cups): This crisp and refreshing leafy green adds a cool and crunchy texture to our taco bowls. Its mild flavor provides a neutral base that complements the savory meat and other toppings, adding a healthy dose of vitamins and hydration.
Tomatoes, chopped (1 cup): Juicy and slightly acidic, chopped tomatoes add a burst of freshness and a vibrant color to our taco bowls. Their natural sweetness and tanginess provide a lovely counterpoint to the richness of the meat and the creaminess of the dressing.
Skinny Ranch Dressing or store-bought (4 tablespoons, omit for dairy-free): This creamy dressing adds a tangy and herby element that many enjoy in their tacos. Opting for a "skinny" version significantly reduces the fat and calorie content. For those following a dairy-free diet, this topping can be easily omitted or substituted with a dairy-free alternative like avocado crema.
Salsa: The quintessential taco topping! Salsa provides a zesty, flavorful kick with varying levels of heat, depending on the type used. Its blend of tomatoes, onions, peppers, and spices adds a vibrant and authentic Mexican flavor that ties all the elements of the taco bowl together.

How to Make Skinny Taco Bowls with Cauliflower Rice

Step 1: Preparing the Light and Nutritious Cauliflower Rice
  • Prep Your Pan for Success: Using a large, nonstick pan is key to preventing the finely chopped cauliflower from sticking and potentially burning. A generous coating of cooking spray further ensures a smooth cooking process with minimal added fat.
  • Heating the Olive Oil for Flavor: Heating the olive oil over medium-high heat not only prepares the pan for cooking but also helps to release the oil's subtle fruity notes, which will infuse the cauliflower rice with a light and pleasant flavor. Ensure the oil is shimmering but not smoking.
  • Even Distribution is Key: When you stir in the cauliflower rice (make sure it's broken up and not in large clumps), diced onions (aim for a consistent small dice for even cooking), and minced garlic (mince it finely to release its pungent aroma), mix thoroughly. This ensures that all the ingredients are coated with the olive oil and will cook evenly.
  • Seasoning for Enhancement: Don't underestimate the power of simple salt and pepper. Add a pinch of each initially, and remember you can always adjust the seasoning to your preference at the end. The salt will draw out some moisture from the vegetables, aiding in the cooking process and enhancing their natural flavors.
  • The Art of Stir-Frying: The 8-minute stir-frying process is crucial for softening the cauliflower rice without making it mushy. Stirring "most of the time" means you're moving the mixture frequently enough to ensure even cooking and prevent sticking, but you don't need to stir constantly. You're looking for the cauliflower to become tender but still have a slight bite, similar to perfectly cooked rice. The onions should become translucent and slightly softened, and the garlic should be fragrant but not browned.
  • Setting Aside for Later Harmony: Once the cauliflower rice is cooked to your liking, setting it aside allows the flavors to meld while you prepare the taco meat. It also prevents it from overcooking if the taco meat takes longer to prepare.
Step 2: Cooking the Savory and Lean Taco Meat
  • Nonstick for Lean Cooking: Using a large nonstick pan again helps to minimize the need for extra oil, especially when cooking with extra lean ground beef, which already has a lower fat content.
  • Browning for Flavor Development: Cooking the ground beef and diced onions together allows their flavors to intertwine. As the beef browns, it develops a richer, more savory taste. Make sure to break up the beef into small, even crumbles for a better texture in your taco bowls. The onions will also soften and sweeten during this process.
  • The Importance of Draining: Pouring the cooked beef and onions into a colander to drain the excess fat is a vital step in keeping this dish "skinny." Excess fat not only adds unnecessary calories but can also make the taco meat greasy. Rinsing the pan before returning the beef can further reduce residual fat.
  • Flavor Infusion with Taco Seasoning: Adding the taco seasoning (ensure even distribution for consistent flavor) along with the corn (breaking up frozen corn ensures it cooks evenly and doesn't clump) and water is where the classic taco flavor really comes in. The water helps to dissolve the seasoning and allows it to coat the beef and corn evenly.
  • The Magic of Simmering: Bringing the mixture to a boil and then reducing to a simmer allows the flavors to meld and deepen. Cooking uncovered helps the water to evaporate and the sauce to thicken slightly, creating a more cohesive and flavorful taco meat. Stirring often during this 5-minute simmer prevents sticking and ensures the flavors are evenly distributed. You're looking for the liquid to mostly reduce, leaving a moist but not watery taco meat.
Step 3: Assembling Your Delicious Skinny Taco Bowls
  • Creating a Light and Nutritious Base: Starting with 1 cup of the prepared cauliflower rice in each bowl provides a substantial yet low-carb and nutrient-rich foundation for your taco bowl. The subtle flavor of the cauliflower rice won't overpower the other ingredients.
  • Layering with Savory Protein: Topping the cauliflower rice with 1 cup of the flavorful taco meat provides the main protein source and that classic taco taste. The warm, seasoned meat will complement the slightly cooler cauliflower rice.
  • Adding Cool Crunch: The ½ cup of shredded or chopped romaine lettuce introduces a refreshing coolness and a satisfying crunch, adding textural contrast to the softer elements of the bowl. Chopping or shredding into bite-sized pieces makes it easier to eat.
  • Boosting Freshness and Juiciness: The ¼ cup of chopped tomatoes adds a burst of fresh, slightly acidic, and juicy flavor. Dicing them into small pieces ensures they distribute well throughout the bowl.
  • A Tangy and Creamy Drizzle: A drizzle of 1 tablespoon of skinny ranch dressing adds a tangy and herby creaminess that many enjoy in their tacos. Using a "skinny" version keeps the calorie and fat content down. For those avoiding dairy, consider a dairy-free ranch alternative or a dollop of avocado crema for a similar creamy texture.
  • The Zesty Finale: Spooning some salsa around the top allows you to customize the level of heat and adds that quintessential zesty and flavorful kick that defines tacos. Choose your favorite salsa, from mild to hot, depending on your preference. The placement around the top allows it to mingle with all the other ingredients as you eat.
  • Serving for Optimal Enjoyment: Serving the Skinny Taco Bowls immediately ensures that all the components are at their ideal temperatures and textures. The warm taco meat and cauliflower rice contrast nicely with the cool lettuce and tomatoes, and the dressings add their flavorful touch.

Shopping Tips
Trader Joe’s sells a 16-ounce bag of riced cauliflower. You will love it. It saves you a lot of time, not having to prep the cauliflower. In addition, many supermarkets, Target and Walmart carry Green Giant’s (16 oz) bag of cauliflower crumble in the produce section.
Most supermarkets sell extra lean ground beef. I used the 96% lean ground beef from Trader Joe’s. Sometimes I use grass-fed 94% lean ground beef  I found at my local supermarket. You could also use ground turkey if desired.

  1. What makes the difference in freestyle and regular smart points? Is it just the corn because I can leave that out. 4 pts difference seems like a big one.

  2. You are so right Vicki. This recipe has 6 SmartPoints not 9. And yes, the only difference between the Freestyle and SmartPoints is the corn.
Thanks for pointing this out. It was a typo by me!
    All the best,
    Nancy

  3. Yes, Charlene, corn has zero points. I factored that in when calculating the Freestyle points for this recipe.
