2 Minute, Microwave Skinny Omelette

Ingredients
  

Ingredients for Omelette:

  • 2 egg whites
  • 1 egg, I like Egg-Land’s Best
  • Salt and pepper, to taste
  • Chopped tomatoes, spinach, scallions, onions, ham, red or green bell peppers, shredded reduced-fat cheese, etc. (add what you like in your omelette)

Ingredients for Toppings: optional

  • Sliced avocado, salsa, ketchup, shredded reduced-fat cheese (for paleo choose approved toppings)

Instructions
 

  • Coat a 4-inch Pyrex dish or small bowl with a little cooking spray. Crack egg whites and egg into bowl. Whisk together well. Sprinkle with a little salt and pepper, to taste. Stir in any ingredients you want to create your omelette. Cover dish with a microwave-safe plate. The eggs will explode all over your microwave, if not covered. Cook for 1 minute. Check to make sure it’s still covered with a plate. Cook at least 1 additional minute or until eggs are completely cooked.
  • Remove bowl from microwave. Use a dull knife to cut around the eggs to separate from dish. Remove to a plate.
  • Top with any toppings, if desired.
  • This recipe makes one serving. For more servings, cook each omelette, one at a time, in the microwave.
