A Skinny Salad I Make Several Times a Week
Ingredients

spring mix or field greens

red or green apple, cored and chopped

red grapes, sliced in half

fresh blueberries

walnuts or pecans, chopped

dried cranberries

Gorgonzola cheese,
crumbled, reduced-fat feta cheese or Parmesan cheese, grated

cup
Trader Joe’s Champagne Pear Vinaigrette Dressing
or Girard’s Light Champagne Vinaigrette, see shopping tip
Instructions
In a large serving bowl, add all the ingredients except the dressing. Refrigerate until ready to serve.
When ready to serve, toss in salad dressing. Start with ¼ cup. Add more dressing, if desired.
This salad can easily be doubled, tripled, etc.
