Amazing, Skinny Spinach Pesto (Gluten-free)

Ingredients
  

  • ¼ cup pine nuts, toasted
  • 3 cups fresh spinach leaves, tightly packed (~6 cups loosely packed)
  • 2 cups fresh basil, tightly packed (~4 cups loosely packed)
  • cup Parmesan cheese, grated
  • ¼ cup water
  • 2 tablespoons olive oil
  • 2 teaspoons fresh garlic, minced
  • A small amount of salt and pepper, to taste

Instructions
 

  • Toast pine nuts under the broiler for about 20 seconds.
  • Place toasted pine nuts and all remaining ingredients in a food processor. Pulse until blended. Scape down sides with a rubber spatula. Blend again, until smooth. Add more salt or pepper, if desired.
