Baked Sweet Potato Fries

Sweet Potato Spears from Trader Joe’s
or 2 large sweet potatoes (~2 pounds, unpeeled)

tablespoons
extra virgin olive oil
½
teaspoon
salt
Fresh ground pepper, to taste
Instructions
Preheat oven to 400 degrees.
If you’re not using already prepped bags, peel the sweet potatoes and cut into ⅛ inch spears.
Place sweet potato spears on a baking pan. Drizzle olive oil over potatoes. Using your hands, toss well to evenly coat.
Sprinkle with salt and pepper, to taste.
Bake for 25-30 minutes until tender and crisp. Turn potatoes once during baking.
