Best Skinny Chicken Parmesan: An Easy Air-Fryer Gem
Ingredients
2 (~ 8 oz each)chicken breasts sliced in half to make 4 thinner breasts
1½ slicesmulti-grain bread to create ⅔ cup bread crumbs, I used Milton’s multi-grain, see prep tips
4 teaspoonsParmesan cheese, grated
1 largeegg
1 cupreduced fat mozzarella cheese, shredded
½ cupjarred marinara sauce or pizza sauce
Olive oil cooking spray
Instructions
Preheat air fryer to 360 degrees.
Add bread crumbs. to a shallow bowl or dinner-size plate. In another bowl and the egg and beat it. Dip chicken into egg then dip in bread crumbs. Be sure to coat both sides of the breasts in the egg and crumbs. When the air fryer is ready, coat bottom of the basket with cooking spray. Place 2 pieces of chicken in basket and spray the top with cooking spray.
Cook 5 minutes, turn and top each with 2 tablespoons marinara sauce, ¼ cup shredded mozzarella cheese, and 1 teaspoon Parmesan cheese. Cook 3 more minutes or until cheese is melted. Set aside and keep warm. Repeat with the remaining 2 pieces.
If your air fryer is larger you can cook all 4 breasts at once. Be sure to not overlap the breasts.
