Place carrots in a microwave-safe bowl. Add a small amount of water. Cover and cook in microwave for 2-3 minutes, to slightly soften. Do not cook until completely soft. They will finish cooking in the crock-pot. Drain water.
Place ham, flat side down, in a large crock-pot. If your ham comes with a glaze packet, throw it out along with any plastic pieces that cover the bone. Add softened carrots all over the sides and sprinkle onions all over top and sides. Pour the can of pineapple chunks, with juice all over the carrots.
In a small bowl, whisk together pineapple juice, honey, soy sauce, garlic, and a little pepper. Pour all over top of ham and over carrots and onions.
Cover and cook on low heat for 3 hours. Baste ham with juices from bottom of crock-pot, a few times throughout the cooking.
