2 cups onions, chopped

Instructions
If you want to remove the skins, peel the potatoes first, before cutting them into chunks. Add potatoes to a pot and cover with water. Bring to a boil, cover and simmer for about 15-20 minutes until tender.
In the meantime, place onions on a microwave-safe plate and cook in the microwave for about 4 minutes, until soft.
Add cooked onions and chicken broth to a blender and blend until smooth.
Drain potatoes into a colander. Place drained potatoes back in pot. Add Smart Balance, pureed onions and broth, and a little salt and pepper. Turn flame to medium and smash using a potato masher or the back of a fork. Mash potatoes until smooth and all the ingredients are heated.
