Easy Chicken, Bacon and Veggie Alfredo Skillet: A Dieter's Delight
Ingredients
4 cups broccoli florets
2 cups baby carrots, cut in half
4 slices bacon (I used Oscar Mayer Select Natural Uncured), see shopping tips
16 ounces chicken breasts (makes 4 breasts)
Salt, pepper, and garlic powder, to taste
1 (15 ounces) jarlight Alfredo sauce, see shopping tips
4 tablespoons grated Parmesan cheese, for topping, optional
Instructions
In a microwave-safe large bowl, add broccoli florets and carrots. Cover with water. Cover bowl with plastic wrap and steam in microwave for about 5-6 minutes, until softened.
Add bacon to a large nonstick pan. Cook turning once until crisp. Remove bacon to drain on paper towels. Keep bacon drippings in pan. Add 4 chicken breasts. Season with a little salt, pepper and garlic powder. Cover and cook over medium heat, about 4 minutes, on each side until no longer pink. Remove cooked chicken to a plate. Do not clean pan. Add Alfredo sauce and steamed veggies. Mix well. Add cooked chicken breasts. Cover and heat 5-10 minutes until dish is hot.
