6 chicken breasts(4 oz each) boneless, skinless (if breasts are larger, cut in half)
1 (14.5 oz.) candiced tomatoes, slightly drained
2 cups baby carrots, whole
2 cupscelery, sliced into large chunks
1 cup onions, chopped
⅓ cup ketchup
1 package Lipton Onion soup mix (dry mix)
2 cloves garlic, minced
1 (12 oz.) bottleor can of your favorite light beer, white wine or reduced-sodium chicken broth
Instructions
Place all ingredients in the crock-pot except the beer. Pour beer all over the top of ingredients. Cover and cook on high heat for 3 hours or low heat for about 6 hours. The cook time can vary based on your crock-pot.
To serve: Place 1 chicken breast on each plate and add about ½ cup vegetables and sauce.
Serve with baked potatoes or whole wheat toast, if desired. There is plenty of sauce to soak into the potato or bread. Yum! Any leftovers freeze great too.
