Fabulous Fajita Chili (Crock-pot or Stove-top)

Ingredients
  

Ingredients for Chili:

  • 2 cups red bell peppers or 1 cup each red and yellow, chopped
  • cups onion, chopped
  • 1 pound extra-lean ground beef or 99% fat-free ground turkey breast
  • 1 (28 oz.) can diced tomatoes or 2 (14.5-oz) cans diced tomatoes
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1 (15 oz.) can chili beans or white beans, rinsed and drained
  • 1 (8 oz.) can tomato sauce or 1 cup pasta sauce from a jar
  • 1 (1 oz.) packet Lawry’s chicken fajita seasonings or use your favorite
  • 2 teaspoons cumin
  • 2 teaspoons chili powder

Ingredients for Toppings, Optional:

  • Tomatoes, chopped
  • Lettuce, chopped
  • Reduced-fat cheddar cheese or lite Mexican blend, shredded
  • Onions, chopped

Instructions
 

  • For Crock-pot: Add onions and peppers to a microwave-safe bowl. Cook in microwave for 3 minutes, to soften a bit. Brown ground beef in a large nonstick pan. Pour into a colander to drain any fat. Add browned meat to crock-pot. Mix in softened bell peppers and onions, tomatoes, beans, tomato sauce, fajita seasonings, cumin, and chili powder. Cover and cook on low heat for 7-8 hours or high heat for 4-5 hours. Time varies depending on your crock-pot.
  • For Stove-Top: Add onions and peppers to a microwave-safe bowl. Cook in microwave for 3 minutes, to soften a bit. Brown ground beef in a large nonstick pan. Pour into a colander to drain any fat. Add browned meat back to pan  Mix in softened bell peppers and onions, tomatoes, beans, tomato sauce, fajita seasonings, cumin, and chili powder. Bring to a boil; reduce heat and simmer, uncovered for 25 minutes.
  • This chili freezes great. Serve with optional toppings on the side and let everyone customize their own bowl, if desired.
