Fantastically Healthy, Cauliflower Rice (Paleo and Gluten-free)
Ingredients
Cooking spray
1 tablespoon + 2 teaspoons olive oil
1 (16 ounces) bag cauliflower rice, I used Trader Joe’s, see shopping tip and to make your own see prep tips, below
1 tablespoon garlic, minced
Salt and pepper, to taste
½ cup green onions (scallions), chopped
Instructions
Coat a large, nonstick pan with cooking spray. Add olive oil and heat over medium-high heat. Stir in cauliflower rice, garlic and add a little salt and pepper. Stir-fry for 6-8 minutes, stirring most of the time, until soft. Add green onions and continue to stir and cook for 1 more minute.
