Fiber Rich Roasted Parsnips, a Healthy Fries Alternative

Ingredients
  

  • 1 pound parsnips, peeled and julienne (cut into thin strips)
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh rosemary, minced
  • ¼ teaspoon salt
  • ¼ teaspoon fresh cracked pepper

Instructions
 

  • Preheat oven to 450 degrees.
  • Layer julienne parsnips on a baking sheet.
  • Drizzle olive oil over parsnips.  Sprinkle with rosemary, salt and pepper.
  • Roast for about 20 minutes until lightly browned and soft.
  • Remove from oven and adjust the salt and pepper, to taste.
