Fiber Rich Roasted Parsnips, a Healthy Fries Alternative

parsnips, peeled and julienne (cut into thin strips)

extra virgin olive oil

teaspoon
fresh rosemary, minced

teaspoon
salt
¼
teaspoon
fresh cracked pepper
Instructions
Preheat oven to 450 degrees.
Layer julienne parsnips on a baking sheet.
Drizzle olive oil over parsnips. Sprinkle with rosemary, salt and pepper.
Roast for about 20 minutes until lightly browned and soft.
Remove from oven and adjust the salt and pepper, to taste.
