Line a baking sheet with foil. Add the potatoes. Drizzle olive oil over the top of potatoes and toss to coat. Sprinkle with a little salt and pepper.
Roast in oven for 25 minutes. Remove from oven, turn over, sprinkle with a little more salt and pepper. Continue to roast for about 20 minutes until golden brown and soft.
Remove from oven and sprinkle with chopped chives.
