Fingerling Roasted Potatoes

Ingredients
  

  • 1 pound fingerling potatoes, see shopping tips
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • Fresh ground pepper, to taste
  • 1 tablespoon chives, chopped

Instructions
 

  • Preheat oven to 425 degrees.
  • Line a baking sheet with foil.  Add the potatoes.  Drizzle olive oil over the top of potatoes and toss to coat.  Sprinkle with a little salt and pepper.
  • Roast in oven for 25 minutes.  Remove from oven, turn over, sprinkle with a little more salt and pepper.  Continue to roast for about 20 minutes until golden brown and soft.
  • Remove from oven and sprinkle with chopped chives.
