Add bacon to a large nonstick pan. Cook until golden and crispy. Keep bacon grease in pan. Using a fork, remove bacon to a plate lined with paper towels. Set aside.
To the same pan, add diced onion and red bell pepper and saute for a few minutes, to soften. Stir in diced sweet potatoes and add desired seasonings. Cook sweet potatoes for about 10 minutes, until soften. Stir often. Place a lid on the pan and continue to cook for about 5 minutes until sweet potatoes are fork tender.
Uncover pan and crumble in bacon. Stir in spinach. Blend well. Continue to cook for a few minutes until spinach is wilted. Use a spatula to create 4 wells in the potato mixture. Crack an egg into each well and cook, covered, 2-4 minutes until eggs are cooked to your liking. If you like your eggs sunny-side up, leave the pan uncovered while they cook.
Using a large spatula, divide among 4 bowls. Serve immediately.
