Hearty and Yummy, Heart Healthy Oatmeal With Berries
Ingredients
½ cup Quaker rolled oats or your favorite
1¼ cups boiling water
¼-½ cup light vanilla soy milk (I like Silk Light Vanilla Soy milk), fat-free milk or light almond milk
¼ teaspoon vanilla extract
1 tablespoon brown sugar or 2 packages sugar substitute such as Splenda or Stevia
¼ teaspoon cinnamon
¼ cup blueberries
¼ cup raspberries
Instructions
In a nonstick saucepan, add oats and cook over medium heat for about 2 minutes to toast. Stir often. Add boiling water and reduce heat to a simmer. Simmer on low for 5 minutes or until most of liquid is absorbed, stirring occasionally. Stir in ¼ cup soy milk, vanilla and continue to simmer for about 3 minutes, until desired consistency. Add more soy milk, if desired.
Stir in brown sugar, Splenda or Stevia and cinnamon.
