4 tablespoonsreduced-fat butter or Smart Balance Light, divided
3 tablespoons honey
1 tablespoon garlic, minced
¼ cup fresh lime juice, divided (juice from 2-3 limes)
Instructions
Preheat oven to 375 degrees.
Season chicken with a little salt and pepper to taste. In a large nonstick pan, over medium heat melt 2 tablespoons butter. Add honey and 2 tablespoons lime juice. Stir until bubbly. Add chicken and cook for 2-3 minutes on each side until browned. Transfer chicken to a glass or metal baking dish.
Add the remaining 2 tablespoons butter, 2 tablespoons lime juice, and garlic. Stir until melted and a little bubbly. Spoon sauce from the pan over each piece of chicken. Use all the sauce.
Bake chicken in oven for about 15 minutes until cooked through. Add lime slices and cilantro for garnish, if desired.
