Honey Lime Garlic Chicken: Richly Flavorful and Easy to Make

Easy Honey Lime Garlic Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts (4 ounces each)
  • Salt and pepper to taste
  • 4 tablespoons reduced-fat butter or Smart Balance Light, divided
  • 3 tablespoons honey
  • 1 tablespoon garlic, minced
  • ¼ cup fresh lime juice, divided (juice from 2-3 limes)

Instructions
 

  • Preheat oven to 375 degrees.
  • Season chicken with a little salt and pepper to taste. In a large nonstick pan, over medium heat melt 2 tablespoons butter. Add honey and 2 tablespoons lime juice. Stir until bubbly. Add chicken and cook for 2-3 minutes on each side until browned. Transfer chicken to a glass or metal baking dish.
  • Add the remaining 2 tablespoons butter, 2 tablespoons lime juice, and garlic. Stir until melted and a little bubbly. Spoon sauce from the pan over each piece of chicken. Use all the sauce.
  • Bake chicken in oven for about 15 minutes until cooked through. Add lime slices and cilantro for garnish, if desired.
