In-N-Out Cheeseburgers, Animal Style, Made Skinny

Ingredients
  

Ingredients for Burgers:

  • 2 large red onions, cut into slices
  • 1 tablespoon olive oil
  • 2 tablespoons Worcestershire sauce
  • 1 pound extra-lean ground beef, I used Trader Joe’s extra lean ground beef (96/4)
  • 1 egg white
  • 1 small yellow onion grated, about 1 cup
  • ½ teaspoon Lawry’s seasoning salt
  • ½ teaspoon fresh ground pepper
  • 3 tablespoon Worcestershire sauce
  • 6 slices of reduced-fat cheese, such as Jarlsberg, Swiss, Havarti, or mozzarella
  • 6 whole wheat buns, I love Trader Joe’s Honey Wheat Buns, see shopping tip or sandwich thins, see below
  • Tomato slices

Ingredients for Condiments:

  • Thousand island dressing, optional, recipe follows
  • Ketchup
  • Mustard

Ingredients for The Thousand Island Dressing

  • cup  Nancy’s Skinny Ranch Dressing or reduced-fat mayonnaise
  • 2 tablespoons chili sauce or ketchup
  • 2 teaspoons pickle relish
  • 1 teaspoon mustard
  • ¼ teaspoon paprika

Instructions
 

  • To make grilled onions: Place sliced onions on a microwave-safe plate.  Cook for 5-6 minutes in microwave until onions are soft. In a large nonstick pan, add olive oil and heat.  Add cooked onions and 2 tablespoons of Worcestershire sauce.  Sauté on medium-high heat until onions are very soft and browned, about 8 minutes.  Stir often.  Keep warm or reheat before serving.
  • Lightly oil grill and heat barbecue to medium.
  • In a large bowl, add ground beef, egg white, grated onions, Worcestershire sauce, seasoning salt and pepper.  Using your hands or a fork, gently mix together.  Handle the meat as little as possible–the more you work it, the tougher it gets.
  • Shape mixture into 6 patties.  Form patties as large as the bun since they shrink when cooked.  Place burgers on grill, close lid, and cook until NO LONGER PINK INSIDE, turning once, about 5 minutes per side.  If using an instant-read thermometer, it should read 160F.  Try not to abuse your burgers by pressing with a spatula, pricking with a fork, or turning frequently as precious juices will be lost!
  • Top each patty with cheese during the last minute of cooking.
  • Remove patties and add to buns. Top each with tomato slices and grilled onions.  Let everyone dress their own.  Serve with condiments such as thousand island dressing, ketchup, and mustard.

Instructions for The Thousand Island Dressing

  • In a small bowl mix together all the dressing ingredients.  Refrigerate until ready to use.
  • Makes about ½ cup
