Low Carb Taco Lettuce Wraps

Ingredients
  

Ingredients for Taco Meat:

  • 1 pound extra lean ground beef or lean ground turkey, see shopping tip
  • 1 cup onions, diced
  • 2 teaspoons garlic, minced
  • 1 package (1 oz.) Lawry’s Taco Seasoning or your favorite
  • cup water

Ingredients for Lettuce Wraps:

  • 12 Boston lettuce leaves or large romaine leaves
  • cups tomatoes, chopped
  • ¼ cup  Skinny Ranch Dressing  or fat-free sour cream
  • ¼ cup salsa, I like Pace Chunky Salsa, mild or medium

Instructions
 

  • In a large nonstick pan, add ground beef or turkey, onions, and garlic. Sauté together until meat is browned.  Bring to sink, pour in a colander, and drain off any excess fat. Add beef mixture back to pan.
  • Add taco seasoning, water and mix well. Bring to a boil, turn heat to simmer, and cook for 5 minutes.
  • To Make One Taco Lettuce Wrap: Add ¼ cup taco meat on top of the lettuce leaf.  Top with 2 tablespoons chopped tomato. Drizzle 1 teaspoon ranch dressing or sour cream and 1 teaspoon salsa over the top.
