1 package Athens mini fillo dough shells (frozen) or other brand’s available
½ cup store bought hummus (I used Trader joe’s roasted garlic)
½ cup diced English cucumber, unpeeled
½ cup tomates, diced and drained
¼ cup fat-free feta cheese, crumbled
Instructions
Preheat oven to 350. Place shells on baking sheet and bake in oven for 5 minutes.
To assemble each appetizer: Fill each shell with 1 teaspoon hummus on the bottom. Top each with a little cucumber and tomato. Finally sprinkle ½ teaspoon feta cheese on top.
These can be made earlier in the day and stored on counter top or refrigerator.
