3 cups frozen shredded hash brown potatoes, see shopping tips
2 tablespoons reduced-fat butter or Smart Balance Light, melted
½ cup grated onion
½ teaspoon seasoning salt, I like Lawry’s
¼ teaspoon salt
Black pepper, to taste
Instructions
Heat the panini maker or George Forman grill.
Place frozen potatoes in a microwave-safe bowl. Heat for 1 minute to mostly defrost but not cook. Drain any liquid. In a large mixing bowl, combine potatoes, melted butter, onions, seasoning salt, salt and pepper. Toss to combine.
Coat panini maker with cooking spray both on top and bottom grill plate. Spoon potato mixture onto center of maker. Slightly pat down to create a mounded circle. Close lid and cook 7-10 minutes until desired crispness.
Using 2 spatulas, remove from panini maker to a plate. Cut in half and add half to another plate.
