Skinny Chicken Sausages, Potatoes and Sauerkraut Skillet with al fresco Chicken Sausages

Ingredients
  

  • cups potatoes, peeled and diced
  • 1 cup onion, chopped
  • 1 tablespoon olive oil
  • 1 package  al fresco Roasted Garlic Chicken Sausage, cut into bite size pieces, see shopping tips below
  • 1 (16 oz.) can sauerkraut, rinsed and well drained, see prep tips
  • 1 (15 oz.) can petite chopped tomatoes
  • A little black pepper
  • Dash of red pepper flakes

Instructions
 

  • Add potatoes and onions to a microwave safe bowl. Cook for about 4-5 minutes until potatoes are slightly soft.
  • Add oil to a large, nonstick pan. Add potatoes, onions, and sausages. Saute for 4 minutes. Stir often. Add sauerkraut and tomatoes. Mix well. Add a little black pepper and a small dash of red pepper flakes. Mix well. Cover and turn heat to simmer. Cook for an additional 3 minutes until all heated and potatoes are soft.
