Skinny Cornbread Meatloaf

Ingredients
  

  • 1 pound extra lean ground beef, see shopping tips
  • 1 egg
  • 1 cup Stove Top Cornbread Stuffing Mix (use the dry mix, do not make stuffing)
  • ¾ cup onions, diced
  • ½ cup barbecue sauce, divided
  • 1 tablespoon Worcestershire sauce
  • ¾ teaspoon Lawry’s seasoning
  • ½ teaspoon garlic powder
  • Black pepper, to taste

Instructions
 

  • Preheat oven to 350 degrees. Line a baking sheet with foil and coat with cooking spray.
  • In a large bowl, add ground beef, egg, stuffing mix, onions, ¼ cup barbecue sauce, Worcestershire sauce, Lawry’s seasoning, garlic powder and a little black pepper. Mix well until thoroughly combined.
  • Place meatloaf mixture in the center of the baking pan. Shape into a 12 x 3 inch loaf by hand.
  • Spread remaining ¼ cup barbecue sauce evenly over top of loaf and down sides.
  • Bake 50 minutes. Remove from oven and let stand for 5 minutes before slicing. Cut into 12 slices.
