In a large nonstick pan, add ground beef and onions. Cook, breaking up the beef into a crumble. Continue to brown the beef until cooked through. Drain any fat from pan. Stir in taco seasonings, and water. Bring to a boil, turn down to low heat and simmer for 10 minutes. Stir in 1 cup corn. Note-you’ll only use 1 cup taco meat for this recipe. Freeze the remaining for another use, see tips below.
Preheat air fryer to 380 degrees.
Lay 1 egg roll wrapper out flat. Add a little water around the rim of the egg roll. Add 2 tablespoons of beef mixture on one side of egg roll. Top with 1 tablespoon of cheese. Start with the end where the meat is and tightly roll up to form a taquito. Continue rolling the remaining ones.
Spray the top with a little olive oil spray. Cook in air fryer for 5-6 minutes, turn over and continue to cook for about 5 minutes until desired crispy. Depending on the size of your air fryer, you might have to cook in 2 batches.
To Bake Them: Preheat oven to 425 degrees. Line a baking pan with foil or parchment paper. Spray a little olive oil spray. Lay egg rolls seam side down on a prepared pan. Lightly spray tops of egg rolls with olive oil spray. Bake for 10-15 minutes until golden and crispy.
