Skinny Garlic Mashers (Dairy-Free, Gluten-Free)

Ingredients
  

  • pounds red potatoes (new potatoes) cut into even sized chunks
  • 3 garlic cloves, smashed
  • 2 tablespoons Smart Balance Light, see healthy benefits and shopping tips
  • ¾ cup reduced-sodium chicken broth, see shopping tips
  • Salt and pepper, to taste
  • ½ teaspoon garlic powder
  • Scallions or chives, chopped for topping (optional)

Instructions
 

  • Add potatoes and smashed garlic cloves to a pot and cover with cold water. Bring to a boil, cover and turn heat down. Simmer for about 15-20 minutes, until tender.
  • Drain potatoes in a colander and place drained potatoes back in pot. Add Smart Balance. Using a potato masher or the back of a fork, smash the potatoes. Add chicken broth, salt, pepper and garlic powder, to taste. Turn flame to medium. Continue to mash potatoes until fairly smooth and all ingredients are heated. They will be a little rustic due to the skins left on. Add more salt, pepper and garlic powder, to taste. Top with chopped scallions or chives, if desired.
  • This recipe can be easily doubled, tripled and so on.
