Skinny Greek-Style Hummus Dip

Ingredients
  

  • 1 (7 ounce, about 1 cup) container prepared hummus, see shopping tips
  • cup cucumber, chopped
  • cup tomatoes, chopped
  • 5 pitted kalamata olives, or black olives, chopped
  • 3 tablespoons fat-free feta cheese, crumbled
  • 1 teaspoon red wine vinegar or any white vinegar drizzled over top of dip, optional
  • Pita chips for serving, see shopping tips

Instructions
 

  • Using a rubber spatula, spread hummus in shallow serving dish about 7-8 inches in diameter.
  • Top the hummus with cucumbers, tomatoes, olives and feta cheese.
  • Cover and refrigerate until ready to serve. This dip can be made up to 24 hours in advance. 
  • Serve with pita chips and cucumber rounds, if desired.
