Skinny Parmesan Meatloaf

Ingredients
  

Ingredients for Meatloaf

  • 1.25 pounds ground turkey (93-94%), 1 package
  • ¾ cup onion, diced
  • ½ cup marinara or pizza sauce
  • ½ cup fat-free ricotta cheese
  • ½ cup plain breadcrumbs
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • Black pepper,  to taste
  • ½ cup marinara or pizza sauce

Ingredients for Topping

  • cup Parmesan cheese, grated
  • ½ or ⅔ cup marinara sauce or pizza sauce

Instructions
 

  • Preheat oven to 350. Line a baking sheet with foil and coat with cooking spray.
  • In a large bowl, combine all meatloaf ingredients except add only ½ cup marinara sauce. Use clean hands to mix together, until combined.
  • Free form loaf on baking pan. Spread top with ½ cup marinara sauce.
  • Bake for 50 minutes. Remove from oven. Spread ½ cup marinara sauce all over top and sides. Top with Parmesan cheese. Place back in oven for about 5 minutes, for cheese to melt.
