Skinny Pizza Bites

Ingredients
  

  • 1 can (12 oz.) Pillsbury Jr. Grand Golden Layers Flaky biscuits
  • 10 tablespoons pizza sauce or marinara sauce, I used Ragu’s pizza sauce
  • cup reduced-fat shredded mozzarella cheese
  • ½ cup (2 ounces) ham, chopped into pieces. or, use your favorite pizza toppings such as extra lean turkey pepperoni, peppers, onions, mushrooms, etc.

Instructions
 

  • Preheat oven to 375 degrees. Coat well a (12-cup) regular muffin cups with cooking spray.
  • Open the package of biscuits. Cut each biscuit in half to create 2 thin biscuits. Roll each piece out a bit or flatten in the palm of your hand to form a larger, thin circle (to create a small pizza dough). You should have 20 flatten pieces of pizza dough. Line each muffin cup with pizza dough. The dough will only go up the sides to a little higher than 1/2 the muffin cup. Add ½ tablespoon of pizza sauce to each. Add a little chopped ham to each, about 4-6 little pieces. Sprinkle 1 Tbsp of cheese over the ham pieces.
  • Put muffin tin in oven and bake about 14 minutes, until golden brown. Using a spoon, remove them from the pan and serve immediately.
  • Repeat steps with remaining dough. There should be 8 pizza bites in this muffin tin.
