Cook onions and red bell peppers in microwave for about 1 minute, to soften.
In a medium nonstick pan, heat butter over medium heat, add cooked onions/peppers, garlic, and sauté for 1 minute. Stir often. Mix in Italian seasoning, a little salt, black pepper, and a small pinch of red pepper flakes.
Stir in tomato sauce and simmer for 5 minutes. Stir often. Gently drop in eggs. Be sure to keep the yolks intact. Cover and simmer on medium-low heat for about 6-8 minutes, until the egg whites are cooked through and the yolks are cooked to your liking.
To serve: Using a spatula, remove 2 eggs from each plate and add tomato sauce around it. Sprinkle each serving with 1 tablespoon Parmesan cheese.
