Skinny Poached Eggs Alla Pizzaiola

Ingredients
  

  • ½ cup onions, diced
  • ¼ cup red bell peppers, diced
  • 1 tablespoon reduced-fat butter or Smart Balance light
  • 1 teaspoon garlic, chopped
  • Salt and pepper, to taste
  • Small pinch of crushed red pepper
  • 1 (8 ounces) can tomato sauce
  • ½ teaspoon Italian seasoning
  • 4 large eggs, I used Egg-Land Best eggs, see shopping tips
  • 2 tablespoons Parmesan cheese, grated

Instructions
 

  • Cook onions and red bell peppers in microwave for about 1 minute, to soften.
  • In a medium nonstick pan, heat butter over medium heat, add cooked onions/peppers, garlic, and sauté for 1 minute. Stir often. Mix in Italian seasoning, a little salt, black pepper, and a small pinch of red pepper flakes. 
  • Stir in tomato sauce and simmer for 5 minutes. Stir often. Gently drop in eggs. Be sure to keep the yolks intact. Cover and simmer on medium-low heat for about 6-8 minutes, until the egg whites are cooked through and the yolks are cooked to your liking.
  • To serve: Using a spatula, remove 2 eggs from each plate and add tomato sauce around it. Sprinkle each serving with 1 tablespoon Parmesan cheese.
