Skinny Potato Salad, Caesar Style
Ingredients

Dutch baby gold potatoes or small red potatoes
cut into chunks, see shopping tips

salt
Fresh ground black pepper, to taste

chives or green onions, chopped
⅓
cup
Cardini’s Light Caesar Dressing
or Girard’s Light Caesar Dressing, see shopping tips

tablespoons
Parmesan cheese, grated
Instructions
Put potatoes in a medium saucepan and cover with cold water.
Bring to a boil, reduce heat, cover and cook until soft (10-15 minutes). Do not overcook.
Drain and rinse in cold water.
In a large bowl, add cooked potatoes and all remaining ingredients.
Gently toss, using a rubber spatula.
Store in refrigerator until ready to use.
