1 (12 oz.) package Trader Joe’s Garlic and Herb Chicken Sausages (fully cooked) or your favorite, see shopping tips below
1 cups onion, diced
1 cup red bell peppers, diced
1 tablespoon olive oil
1 teaspoon garlic, minced
Pinch of red pepper flakes, optional
1 (16 oz.) bagcauliflower rice, see shopping tips
½ cup reduced-sodium chicken broth
½ cup scallions, chopped
Instructions
Cut each sausage into ½ inch slices (12-14 slices each).
Add onions and peppers to a microwave safe bowl or plate. Cook in microwave for 3 minutes, to soften.
Coat a large, nonstick pan with cooking spray. Heat olive oil in pan. Add onions, red bell peppers and garlic. Add a little red pepper flakes, if desired. Sauté for 2 minutes. Add cauliflower rice and continue to cook for 3 minutes, stirring often. Mix in sausages, chicken broth and scallions. Sauce for 2 more minutes, until hot.
