So Yummy, Sloppy Joe Cauliflower Rice

Ingredients
  

  • 1 cup onions, diced
  • 1 cup red bell peppers, diced
  • 1 pound extra lean ground beef or 99% fat-free ground turkey, see shopping tips
  • 1 (16 oz.) bag cauliflower rice, see shopping tips
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 cup ketchup
  • cup water
  • 2 tablespoons tomato paste, see shopping tips
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • ¼ teaspoon red pepper flakes

Instructions
 

  • Place onions and red bell peppers on a microwave-safe plate or bowl. Cook in microwave for 3 minutes, to soften. Set aside.
  • In a large nonstick stick pan, add ground beef and cook over medium-high heat, to brown. Be sure to break up beef into a crumble as it cooks. Stir in cauliflower rice, olive oil, and garlic. Cook and stir for 5 minutes. Stir in ketchup, water, tomato paste, mustard, Worcestershire sauce, and red pepper flakes. Mix well. Simmer for 5 minutes or until veggies are soft. Stir often.
  • Serve in a bowl. Can be topped with shredded lettuce and tomatoes, if desired.
