Super Healthy and Amazing Beet Hummus

Ingredients
  

  • 1 package (8 oz) Steamed and Peeled Baby Beets, drained, see shopping tips or 2 medium (1½ cups) cooked beets, see prep tips
  • 1 (15 oz) can garbanzo beans, rinsed and drained
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 tablespoon water
  • 1 tablespoon fresh garlic, chopped
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • Fresh ground pepper to taste

Instructions
 

  • Place all ingredients in a food processor or blender and pulse until smooth. Taste and adjust seasonings, as desired.
  • Store in refrigerator for up to 5 days.
  • Serve with reduced-fat pita chips or sliced cucumbers, carrots or celery.
