Sweet Potato Turkey Chili (Crock-Pot)

Ingredients
  

  • 1 pound ground turkey
  • 1 teaspoon fresh garlic, minced
  • 3 cups (~2 large) sweet potatoes, peeled and cut into bite-sized pieces, roughly same size
  • 1 (15 oz.) can tomato sauce or 2 cups jarred tomato sauce
  • 1 (15 oz.) can petite diced tomatoes
  • 1 (15 oz.) can pinto beans, rinsed and drained
  • 1 cup onions, diced
  • 1 cup carrots, chopped
  • ¼ cup water, add more if needed
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • Black pepper
  • teaspoon red pepper flakes
  • Reduced-fat shredded cheese (optional topping)

Instructions
 

  • Brown ground turkey with garlic in a large nonstick pan. Cook until no longer pink. Drain any fat. Add turkey to crock-pot. Stir in remaining ingredients and mix well to combine. Cover and cook on Low Heat for 6-8 hours or High Heat 3-4 hours.
  • Serve chili with any chili fixings that you like (fat-free sour cream, chopped cilantro, diced onions, tomatoes, sliced avocado, hot sauce and such).
