The BEST Skinny Bacon Topped Italian-Style Meatloaf
Ingredients
Ingredients for Meatloaf:
1 poundextra-lean ground beef (I use Trader Joe’s (96%) lean or extra lean grass feed beef)
1 cup jarred pasta sauce, I used Classico tomato basil
½ cupPanko bread crumbs
1 cuponions, diced
1 largeegg
¾ teaspoongarlic powder
¾ teaspoonItalian seasoning
¼ teaspoon salt
¼ teaspoonblack pepper
Ingredients for Topping:
½ cupjarred pasta sauce
3 tablespoons Parmesan cheese, grated
3 strips of bacon, see shopping tips
Instructions
Preheat oven to 350 degrees. Line a baking pan with foil and coat with cooking spray.
In a large bowl, combine beef, 1 cup pasta sauce, bread crumbs, onions, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until completely combined.
Place meatloaf mixture in center of the baking pan and by hand, shape into a 12 x 4-inch loaf. Spread remaining ½ cup pasta sauce over top of the meatloaf. Evenly sprinkle the top with Parmesan cheese and line 3 stripes of bacon on top.
Bake for 1 hour. Let stand 5 minutes. Cut the loaf into 12 slices.
