The BEST Skinny Bacon Topped Italian-Style Meatloaf

Ingredients
  

Ingredients for Meatloaf:

  • 1 pound extra-lean ground beef (I use Trader Joe’s (96%) lean or extra lean grass feed beef)
  • 1 cup jarred pasta sauce, I used Classico tomato basil
  • ½ cup Panko bread crumbs
  • 1 cup onions, diced
  • 1 large egg
  • ¾ teaspoon garlic powder
  • ¾ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Ingredients for Topping:

  • ½ cup jarred pasta sauce
  • 3 tablespoons Parmesan cheese, grated
  • 3 strips of bacon, see shopping tips

Instructions
 

  • Preheat oven to 350 degrees. Line a baking pan with foil and coat with cooking spray.
  • In a large bowl, combine beef, 1 cup pasta sauce, bread crumbs, onions, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until completely combined.
  • Place meatloaf mixture in center of the baking pan and by hand, shape into a 12 x 4-inch loaf. Spread remaining ½ cup pasta sauce over top of the meatloaf. Evenly sprinkle the top with Parmesan cheese and line 3 stripes of bacon on top. 
  • Bake for 1 hour. Let stand 5 minutes. Cut the loaf into 12 slices.
