Wonderful Waldorf Salad Made Skinny
Ingredients

red grapes, cut in half

red apple, cored and diced

tart green apple, cored and diced

celery stalks, sliced (~1 cup)

fennel bulb, trimmed, cored and diced

toasted walnuts, chopped

butter head lettuce leaves (Boston lettuce), chopped
Instructions
Prepare the Skinny Blue Cheese Dressing recipe below.
In a large bowl, toss together ⅔ cup dressing, grapes, apples, celery, fennel and walnuts.
To assemble the salads:
place the chopped lettuce among 6 salad plates. Mound salad mixture on leaves and serve at once.
