Skinny Parmesan Meatloaf
Ingredients
Ingredients for Meatloaf
- 1.25 pounds ground turkey (93-94%), 1 package
- ¾ cup onion, diced
- ½ cup marinara or pizza sauce
- ½ cup fat-free ricotta cheese
- ½ cup plain breadcrumbs
- 1 large egg
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- Black pepper, to taste
- ½ cup marinara or pizza sauce
Ingredients for Topping
- ⅓ cup Parmesan cheese, grated
- ½ or ⅔ cup marinara sauce or pizza sauce
Instructions
- Preheat oven to 350. Line a baking sheet with foil and coat with cooking spray.
- In a large bowl, combine all meatloaf ingredients except add only ½ cup marinara sauce. Use clean hands to mix together, until combined.
- Free form loaf on baking pan. Spread top with ½ cup marinara sauce.
- Bake for 50 minutes. Remove from oven. Spread ½ cup marinara sauce all over top and sides. Top with Parmesan cheese. Place back in oven for about 5 minutes, for cheese to melt.
